Bok chow, a hardy winter plant, grows in small black seeds. Seeds usually germinate within five to seven days when planted one quarter of an inch deep in moist soil and stored at a temperature of between 50 and 80 degrees Fahrenheit. Seeds produce a single stem with two heart-shaped leaves as they germinate. These original leaves are not the same as the following leaves. The following leaves have rounded edges and grow into mature green leaves of the plant that are joined together. The seedlings grow well in full sun, although the evening shade can extend their life to tropical areas.
The stem continues to thicken and stretch as the bok chok continues to grow. The plant then produces several stems, or stems, in a strong group. Plants need moist soil, so weekly watering is necessary when there is no rain. Providing about one inch of water per week, or enough to keep 6 inches high in moist soil, provides enough moisture for continued healthy growth. Dry Bok Choy plants tend to bind faster than those that are kept wet and well watered. Plants continue to produce leaves and add up to 6 inches in height for baby bok choy species, or up to 2 feet tall with standard varieties.
The heads form as bok chok produce produces its full leaves. The mature head has many white stalks covered with large green leaves with white veins. You can harvest heads once they have reached their full size, which varies depending on the variety. The poles are attached to the base, so cutting the root of the plant just below the ground allows you to remove the entire head completely. Most varieties are ready for harvest 50 to 60 days after germination or replanting. For the plant to grow back, be sure to harvest the stems when you harvest, and leave one inch of stem and roots in the ground.
Increased cold or heat can cause the bok choy to leak, or send a seed stem. The leaves have a bitter taste that makes them indestructible after brewing. Although bok chow can withstand light frosts, prolonged temperatures below 50 F can cause frostbite, as there may be temperatures above 75 or 80 F. The seed stem grows to about twice the height of the leaves and produces a small cluster of yellow flowers. . After flowering, the seeds finish maturing in the remaining seed branches. Bok choy withers and dies after laying the seeds.
